Superfood Snack Bars

My mom really likes to eat granola/nut bars but most of the ones you find in stores aren't that healthy and have alot of added sugar or are held together with coconut oil (I don't really like the idea of eating a bar made of oil, tbh).

So these are held together by sticky fruit and contain no added sugar or fat!
+ there is no baking involved, so super simple!




*Makes 8-10 bars

Ingredients

50 gr nuts (hazelnuts, almonds - whichever nuts you like)
50 gr rolled oats
100 gr raisins
150 gr dried apricots
4 tbsp orange juice
2 tbsp sunflower seeds
2 tbsp pumpkin seeds

1 tbsp goji berries
1 tbsp chia seeds

1/2 cup nuts (hazelnuts, almonds - whichever nuts you like)
1/2 cup + 1 tbsp rolled oats
1/2 cup raisins
3/4 cup dried apricots
4 tbsp orange juice
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
- optional-
1 tbsp goji berries
1 tbsp chia seeds


Line a 18x25cm / 7x10inch dish with parchment paper and set aside.
Add the raisins, dried apricots and orange juice to a food processor and blend until all chunks are gone and the mixture forms a sticky paste.
Add the paste to a medium bowl.
Now add the nuts, oats, seeds and - optional- goji berries  to the food processor and pulse until most big pieces are gone.
Add the nut mixture to the fruit paste in the bowl and mix them together.
Spoon the mix into the dish lined with parchment paper and spread it out evenly.
Place in the refrigerator for at least 1 hour, then take it out of the dish and cut into 8-10 bars (or smaller if you prefer) and wrap them in parchment paper.
