3-Ingredient Quick Winter Soup
This soup is great for when you really want something warm and comforting and you want it NOW.
This recipe only takes about 20 minutes to make, is super easy, delicious and healthy.
If you use the same or similar stock powder as me, the soup is fat free, dairy free, gluten free and vegan!
Ingredients (for 1 bowl of soup)
1 small sweet potato
1 stalk of celery
1/2 Granny Smith apple
1 tsp vegetable stock powder (I use Tellofix Gold)
Cut up the ingredients and add them to a small pot.
Add about 500 ml / 16 oz of water.
Add the stock powder.
Bring to a boil and let simmer for about 15 minutes or until the sweet potato is tender.
Take off the heat and pour into a blender or use an immersion blender to blend the soup until smooth.
Garnish with green onions if you like.
